The sour cherries have a unique taste and they are candied in their own syrup. Although they take their name from the Turkish city of Cerasonte, they have become a culinary specialty of Emilia Romagna.

The cherry juice, with its pleasantly sour taste, gives the colour to the velvety, milky gelato base with its shards of caramelised hazelnuts and chocolate chips.
